If you're interested (and you may already know this) John Seymour's "Forgotten Arts and Crafts" (available used on Amazon and all over) has lots of information all kinds of pre-industrial crafts - but well covered are things like critter fencing, gates, hedgerows, coppicing, withies - all sorts of things that would be perfect for your place. Come to think of it, since Seymour's a product of the same English countryside that gave us the good Professor, I imagine a fair amount of the things in the book are things JRRT imagined as he was describing Hobbiton, Bree, and environs.
